## Ingredients

### For the crust

- 1 1/2 cups graham cracker crumbs, 180 g, about 12 full sheets
- 2 tablespoons granulated sugar
- 6 tablespoons unsalted butter, 85 g, melted

### For the filling

- 32 ounces full-fat brick cream cheese, 900 g, four 8-ounce packages, at room temperature
- 1 1/4 cups granulated sugar, 250 g
- 1 cup sour cream, 240 g, at room temperature
- 2 teaspoons vanilla extract
- 1 tablespoon fresh lemon juice
- 1 tablespoon all-purpose flour
- 1/2 teaspoon fine salt
- 4 large eggs, at room temperature

### For the blueberry topping

- 3 cups blueberries, 450 g, fresh or frozen, divided
- 1/3 cup granulated sugar, 67 g
- 2 tablespoons fresh lemon juice
- 1 tablespoon cornstarch
- 2 tablespoons water

## Instructions

1. **Prepare the pan.** Preheat the oven to 325°F (165°C). Wrap the outside of a 9-inch springform pan in two layers of heavy-duty foil. Lightly grease the inside.
2. **Make the crust.** Stir the graham cracker crumbs, sugar, melted butter and salt until evenly moistened. Press firmly into the bottom and about 1 inch up the sides of the pan. Bake for 10 minutes, then cool while you make the filling.
3. **Beat the cream cheese.** In a stand mixer with the paddle, or with a hand mixer, beat the cream cheese on medium-low until completely smooth, about 2 minutes, scraping the bowl and paddle. 4. **Finish the filling.** Beat in the sour cream, vanilla, lemon juice, flour and salt until smooth. Add the eggs one at a time on low, mixing just until each disappears. Scrape the bowl, fold a few times by hand, and tap the bowl on the counter to release bubbles.
5. **Bake in a water bath.** Pour the filling over the crust and smooth the top. Set the springform in a roasting pan, place in the oven, and pour hot water into the roasting pan to come 1 inch up the sides. Bake for 65 to 75 minutes, until the edges are set and the center still wobbles slightly.
6. **Cool slowly.** Turn off the oven, prop the door open a few inches, and leave the cheesecake inside for 1 hour. Remove from the water bath, discard the foil, and run a thin knife around the edge. Cool to room temperature, about 1 hour, then cover and refrigerate for at least 6 hours or overnight.
7. **Make the blueberry topping.** In a saucepan, combine 2 cups of the blueberries with the sugar and lemon juice. Cook over medium heat, stirring, until the berries burst and release their juice, about 5 minutes.
