The one thing you cannot rush is the chilling: the cheesecake needs a night in the refrigerator to set properly and for the flavors to settle.

Lotus Biscoff is the original speculoos cookie and cookie butter; Trader Joe's Speculoos Cookie Butter and other brands work just as well. Use the smooth spread for the filling and topping. You will need about 32 cookies for the crust and topping, which is a little more than one standard package, so buy two.
A tablespoon of flour in the filling is insurance against cracks and weeping. It does not affect the texture.
How to make a water bath without a leaky springform
Wrap the outside of the springform pan in two or three layers of heavy-duty foil, pressing it tightly up the sides, before you add the crust. Set the wrapped pan inside a roasting pan, and once the filling is in, pour hot water into the roasting pan until it comes about an inch up the sides of the springform. The foil keeps water out; the water keeps the oven humid and the temperature steady.
An alternative that guarantees a dry crust: skip wrapping the pan, and instead place a roasting pan of hot water on the rack below the cheesecake. You get most of the benefit with none of the risk.
How to tell when cheesecake is done
After 55 to 65 minutes at 325°F, the edges of the cheesecake should look set and slightly puffed, and the center 2 to 3 inches should still wobble like gelatin when you gently shake the pan. It will look underdone; that is correct. An instant-read thermometer inserted an inch from the center should read about 150°F. The residual heat finishes the job as it cools in the oven.

- Cracks come from air beaten into the batter, overbaking, or cooling too quickly. Beat on low, pull the cheesecake while the center still wobbles, cool it in the turned-off oven for an hour, and loosen the edge from the pan before it shrinks. A crack is easily hidden under the cookie butter topping anyway.
- Do I really need a water bath?

Instructions
Prepare the pan
Preheat the oven to 325°F (165°C). Wrap the outside of a 9-inch springform pan tightly in two or three layers of heavy-duty foil. Lightly grease the inside.
Make the crust
Stir the cookie crumbs, melted butter and salt together until the mixture looks like damp sand. Press firmly into the bottom of the pan and about 1 inch up the sides, using the bottom of a measuring cup. Bake for 10 minutes, then set aside to cool while you make the filling.
Beat the cream cheese
In a stand mixer with the paddle, or with a hand mixer, beat the cream cheese on medium-low for 2 minutes until completely smooth, scraping the bowl and paddle. Add the sugar and beat 1 minute more. Add the cookie butter and beat until combined, scraping again.
Tip: Keep the mixer on low to medium-low throughout. Beating on high whips in air, which causes cracks and a sunken top.
Finish the filling
Beat in the sour cream, flour, vanilla and salt until smooth. Add the eggs one at a time, mixing on low just until each disappears. Scrape the bowl one last time and give the batter a few folds with a spatula. Tap the bowl on the counter a few times to release air bubbles.
Assemble the water bath
Pour the filling over the crust and smooth the top. Set the springform inside a large roasting pan and place it in the oven. Carefully pour hot water into the roasting pan until it comes 1 inch up the sides of the springform.
Bake
Bake for 55 to 65 minutes, until the edges are set and the center 2 to 3 inches still wobbles when the pan is nudged. Turn off the oven, crack the door open, and leave the cheesecake inside for 1 hour.
Cool and chill
Lift the pan out of the water, remove the foil, and run a thin knife around the edge to loosen the cheesecake from the pan (this prevents cracks as it shrinks). Cool completely at room temperature, about 1 hour, then cover and refrigerate for at least 6 hours, preferably overnight.
Top and serve
Release the springform ring. Melt the 1/2 cup of cookie butter in the microwave for 20 to 30 seconds until pourable, spread it over the top of the cold cheesecake, and scatter with the crushed cookies. Chill for 15 minutes to set, then slice with a hot, dry knife, wiping between cuts.
Notes
- Everything must be at room temperature: cream cheese, sour cream and eggs. This is what prevents lumps.
- Mix on low. Air in the batter causes cracks.
- Do not cut it before it has chilled at least 6 hours; the texture is not set until then.
