Instructions
Heat the oven
Heat the oven to 425°F (220°C). Line a 12-cup muffin pan with paper liners or grease it well.
Bloom the cocoa
In a large bowl, whisk the cocoa powder with the hot coffee or water until smooth. Let it cool for 5 minutes.
Mix the dry ingredients
In a separate bowl, whisk together the flour, baking soda, baking powder and salt.
Mix the wet ingredients
