Instructions
Heat the oven
Heat the oven to 425°F with a rack in the center. Line a 12-cup muffin pan with paper liners or grease it well.
Mix the wet ingredients
In a large bowl, mash the bananas with a fork until mostly smooth. Whisk in the melted butter, brown sugar, egg, yogurt and vanilla until well combined.
Add the dry ingredients
Sprinkle the flour, baking soda, baking powder, cinnamon and salt over the banana mixture. Fold together with a spatula just until no dry flour remains. A few lumps are fine. Fold in the walnuts or chocolate chips, if using.
Tip: Overmixing makes muffins tough and full of tunnels. Stop as soon as the flour disappears.
Fill the cups
Divide the batter evenly among the muffin cups, filling them to the top. Sprinkle with a few extra walnuts or a little coarse sugar if you like.
Bake
Bake for 5 minutes at 425°F. Without opening the oven door, reduce the heat to 350°F and bake for 13 to 15 minutes more, until the tops are golden and spring back when pressed, and a toothpick inserted in the center comes out clean.
Cool
Cool the muffins in the pan for 5 minutes, then move them to a wire rack. Serve warm or at room temperature.
